Looking beyond grape wines, TUX uncles explores the world of Spanish Jerez/sherry wine with Yiting Wang (王依亭). Sherry wine goes very well with Taiwan cuisines and snacks - chicken feet, rice balls, and braised tofu are just some that comes to mind immediately.
Sherry comes in several categories. Dry vs. sweet is the main demarcation. Fino and Manzanilla are the more familiar dry sherry types. When fermentation ends with around 12% alcohol, brandy is added to fortify the wine to 15%. It is then aged with (naturally occurring) la flor (酒花) which is a type of mold that grows on top of the wine in the barrel. Flor helps to minimize oxidization and imparts the distinctive sherry flavor.
Solera is the aging system where the wine barrels are positioned with the youngest on top to the oldest at bottom. Every year before new wine is poured into the top barrel, each of the successive vintages of older wine are drained one level lower to make room. In other words, sherry wine is always a blend with prior vintages.
Serving: keep it cold and an open bottle can easily keep for one month.
