Derek Plotkowski, a PhD student in the Department of Plant Agriculture, talks about his search for the perfect apple variety for making cider. He explains why some ciders are sweeter than others, why “eating” apples don’t make good “drinking” apples and where to find some of Ontario’s best hard cider.
