Mezcal is sometimes seen as the little brother to tequila, but the world of mezcal is actually far wider reaching that tequila, especially considering tequila is actually just a subset of the wider family of mezcal. Made from any variety of agave, not just blue weber, Mezcal is known in Oaxaca with the saying “Para todo mal, mezcal, y para todo bien, también” which translates to "For everything bad, mezcal, and for everything good, as well."
For this episode we brought on mezcal expert Max Reis. Looking at the long haired tattooed metal rocker you wouldn’t guess a mezcal connoisseur, but the man has worked in the alcohol industry since he was of legal age and has spent enough time getting his hands dirty with the mescaleros south of the border that he has indisputably earned the title.
We talk about various methods of fermentation including leather sacks, as well as methods of creation that range from artisanal to ancestral.
A quick note, we don’t usually do disclaimers because, well, this is a spirits show where we drink and swear and have a good time, but just so everyone knows there are some topics involving religion and some cocktails that Max has been notorious for that may be a bit sensitive for some people. That’s all I’m going to say.
