On this episode we are exploring Bardstown Bourbon Company, a relatively new but award winning and quickly growing distillery. But distillery doesn’t really capture the full extent of what Bardstown is doing. Sure, they are distilling their own spirit of course, but they have been making a big name for themselves in the blending and finishing realms as well. We tasted through their Fusion series which really highlights their year after year blend, their Collaboration series which highlights interesting barrel finishes in conjunction with wine makers and other spirits makers, and their Discovery series which is about the blending of the young and the old.
I think it is really easy to throw around a word like innovation, it's a buzzword that anyone just starting off is likely to reference, but tasting a very wide variety of products from the company really made me feel as that is in fact the exact right word to describe Bardstown. While they are letting their own distillate age, they are constantly experimenting, tweaking, and not afraid of missteps on their way to making something new. Just as an example, in their contract business, they have over 40 different mash bills that they are making in house for other different companies. In a world where many distilleries have a mash bill or two and stick to it, these guys celebrate variety.
We learned this and much more from Dan Callaway of Bardstown Bourbon who hopped on a video call with us to chat through many of their products, stories behind their creation, and what Bardstown has coming up.
