Meg's Hygge Banana Bread 🙂
2 cups regular or gluten-free flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
Mix 1/2 cup softened butter (1 stick cut up) with 3/4 cup tightly packed brown sugar with a stick or mixer. Add 2 large eggs (room temperature) and stir or mix. Add 2-3 mashed ripened bananas. Add in 1 tsp vanilla. Slowly add in flour mixture and stir or mix. Add in, if you'd like, any kind of nuts. I prefer pecans.
Bake at 350 degrees for 60-65 minutes. Be sure to slide a toothpick or fork in the middle to ensure it's baked thoroughly. If the top is browning too much put tin foil over the top for the last 20-30 minutes.
Let cook and enjoy with butter and afternoon tea if that's your thing 🙂
